  • Red onion: to add sweetness and crunchy texture.  You may also use white onion.
  • Jalapeño pepper: to add some heat.
  • Lemon or lime juice: to bring in a citrusy flavor. Citrus juice also keeps the guacamole longer from turning brown.
  • Cumin powder: to add nice, earthy flavor.
  • Salt & pepper: to marry all the flavors.  
  • Cilantro: to add freshness.

How to Make Mango Guacamole

This recipe comes together in about 15 minutes in just a few simple steps:

  1. Grind or mash diced onion, jalapeño, 2 tbsp of cilantro, salt, pepper and cumin into a paste.  Making the paste first is key to allowing all these ingredients to blend together before adding the avocados.  This is how they make traditional guacamole in Mexico and this is why it is so flavorful!  
  2. Combine the paste and mashed avocados.
  3. Add sundried tomatoes (if desired), citrus juice and cilantro.
  4. Finally top with diced mango and serve!

Tips for Making This Tropical Vibe Mango Guacamole Perfectly

  • Make sure to use perfectly ripe avocados to achieve creamy texture and rich flavor.
  • You will need ripe sweet mangoes to add a tropical, sweet flavor to this guacamole.
  • Make the paste consisting of diced onion, jalapeño, cilantro, salt, pepper and cumin first.  Then add the avocados.
  • If you do not have a mortar and pestle, you may use a fork to mesh all the paste ingredients on a cutting board or in bowl.
  • If you include sundried tomatoes, cut them into small pieces before adding them to the guacamole.  They will add texture to the dip.  Also, the oil that comes with sundried tomatoes will add to the creaminess. If you use ripe fresh tomatoes, make sure to add them only before serving to prevent them from releasing their juices and making the guacamole too watery.
  • Before serving, taste and adjust to desired spiciness (more jalapeño or cumin) or sweetness (more mango).

Can I Make Mango Guacamole Ahead of Time?

I do not recommend making this guacamole ahead of time as it is best served immediately, but if you absolutely must, try these two tricks to keep it from turning brown:

  • Place plastic wrap directly on the surface of your guacamole before sealing the airtight container.  The plastic will create a barrier against oxygen.
  • Put one or two avocado pits into the guacamole, cover, and refrigerate until it is time to serve.  Remember to remove the pits before serving.

Ingredients

  • 2 medium/large ripe avocados
  • half of 1 ripe mango, diced
  • 2 tbsp sundried tomatoes (chopped, optional)
  • 2 tbsp red onion, finely diced
  • 1 tbsp jalapeño pepper, finely diced
  • 3 tbsp cilantro, finely chopped
  • 1 tsp ground cumin
  • ½ tbsp lemon or lime juice
  • ½ tsp salt
  • 1/8 tsp pepper

Instructions

  • Place the diced onion, jalapeño, 2 tbsp of cilantro, salt, pepper and cumin powder in a mortar. Using a pestle, roll all ingredients round and round against the mortar to grind them into a paste.

  • Transfer the paste into a bowl, add avocados and mash with a masher into a creamy mixture.
  • Add sundried tomatoes (if desired), remaining chopped cilantro, lemon juice and mix gently.
