Apricot – Date Energy Balls

These no-bake, healthy, vegan, gluten-free energy balls take less than 15 minutes to whip up in a food processor. Perfect as a healthy, homemade dessert, snack or protein bites after a good workout!

Ingredients

  • 1 cup medjool dates, pitted (or approximately 16 dates)
  • ½ cup raw almonds soaked and drained, if desired
  • ½ cup dried apricot
  • 1/8 tsp salt
  • ¼ cup cacao powder
  • 1 tbsp almond milk
  • shredded coconut optional for topping

Instructions

  • Put all ingredients in a food processor and blend until well combined and finely chopped.
  • Disconnect the processor and, using your hands roll the mixture into 10-11 balls, using one full teaspoon for each ball.
  • Roll the balls in the shredded coconut before enjoying, if you are a coconut aficionado.

Notes

  • For a mango-cashew variation (pictured above), substitute dried apricot with dried mango and substitute almonds with cashews.
  • These energy balls will keep in a refrigerator for 1 week.
  • I love treating myself to one or two of these after an intensive workout.
  • You may use deglet noor or medjool dates in this recipe.
